From the chef/co-owner of Southampton's Blue Sage, just-opened Thoreau's a 40-seat BYO (for now) serving a shockingly appetizing meatless menu ranging from apps like ratatouille & basil pumpkin seed pesto sliders to entrees like red lentil khorma w/ butternut squash in a mild curry, and the Cubano Supper's plantain empanadas w/ sunflower seed chipotle pesto & jicama slaw, plus a healthy range of house-made desserts -- because as everyone learned in high school, Thoreau was a Flan-scendentalist.
