From a Top Chef finalist who spent youthful summers gorging on Carolina BBQ, the strip-malled Bulldog's done up like an exposed brick Main Street railroad loft. The owner's smoke/braise/vinegar process means less smoke, more spice absorption, and delicate meat in the form of baby back ribs, pulled pork, brisket, chicken, skirt steak, and shrimp; desserts include root beer floats, seasonal cobbler, and a s'more pie -- order one, and add yourself to the list of delicate meats.
