In particular, adding one "secret ingredient" -- sodium citrate -- will elevate your cheese sauce to a whole new creamy, emulsified level. They also recommend pouring in some beer, chopped up hot peppers, and even a few squirts of hot sauce, which are all good in our book.
However, there doesn't seem to be any science to support dipping your nachos versus bathing them in the cheese sauce, so that's all on you. And based on how eating nachos goes, they might literally end up on you.
