How to Make Perfect Nachos, Based on Actual Science
Obviously, nachos are among mankind's greatest accomplishments -- right up there with the creating the Internet, harnessing the power of fire, and putting a man on the moon. That's why you shouldn't even dream of messing around when it comes to concocting the perfect, piping-hot cheese sauce for your tortilla chips to wear as they soar into your mouth. Clumpy, oily, crappy nacho cheese did not advance the human race.
For those of you who want to take your nachos seriously -- perhaps even to the next level -- a new video from Reactions explains exactly how to make a creamy, smooth, and customizable cheese sauce, all based on actual chemistry. In particular, adding one "secret ingredient" -- sodium citrate -- will elevate your cheese sauce to a whole new creamy, emulsified level. They also recommend pouring in some beer, chopped up hot peppers, and even a few squirts of hot sauce, which are all good in our book.
However, there doesn't seem to be any science to support dipping your nachos versus bathing them in the cheese sauce, so that's all on you. And based on how eating nachos goes, they might literally end up on you.
