From a couple of brew-crazed dudes who moved to Belgium for a spell to train with a world-renowned master brewer on an ostrich farm (seriously, brew-crazed dudes, who're you kidding?), PBC's a renegade brewing outfit with their eyes on expanding their operation and becoming even bigger brewers, a wise move considering Prince Fielder has zero hops. Suds currently being cranked out of their basement headquarters include a 7.5 % ABV porter brewed with cherrywood-smoked malt (the result of which is reminiscent of BBQ sunflower seeds), the 13% ABV oak/bourbon-kicked Abduction Imperial Stout (notes of dark chocolate, ripe dark fruits, and a little vanilla), and an experimental brew called the Pastrami on Rye: an 8.5% ABV dark rye brewed with all the spices (except garlic) one would traditionally use to make pastrami, though drink too much and you'll get totally slaw-py. In the interest of bringing their handiwork to the masses, they're hosting a series of gratis tastings throughout December, with forthcoming events including a showcase at hophead haven West Lakeview Liquors (where both founders formerly worked), and another at City Provisions, a deli/grocer dedicated to being green, so no surprise they're giving people enough free beer that they too realize that dream
They're also raising a Kickstarter fund right now to fulfill plans for a full-on brick and mortar boutique brewery, with anyone who registers for it online (no donation required) entered to win a custom home brewing set, which'd ensure you'd always have enough beer to believe a boys basketball team would have any need for Julie Connor, or worse, Anthony Anderson.
