Nestled cozily inside beachfront hotel/spa Canyon Ranch, the Carillon focuses on getting your mind well via a roster of strictly organic, sustainable, and biodynamic booze in a dark wood-heavy space with a huge granite bar, big ol' Edison bulbs hanging down over it, an impressive display wall loaded with backlit wines, and club chairs, one of which a confused Luke Wilson tried to eat while you were reading this. He's totally fat. Ease your belly with to-be-shared plates like artichoke fries w/ organic ketchup; cava chicken fondue w/ Fuji apples, grapes, and scallions; and a conglomeration of dates, Maytag blue, and veal bacon called "Devils on Horseback", unlike Blue Devil on Horseback, which just describes the only transportation Trajan Langdon can now afford. Next up's the let's-call-it-good-for-you alcohol (even the hard stuff's 100% organic), including a nice range of wines, rare-ish beers like Pinkus Munster Alt and Monk in the Trunk Amber, plus cocktails crafted with homemade mixers and sweeteners, including the Tropical Whiskey Punch w/ Highland Harvest Scotch, mango, pineapple & lemon, and Carlos' Homemade Sangria loaded w/ various wines, tons of fresh fruit & apple brandy, finally putting to rest damaging rumors that the singer used a Zune.
When you're ready to get all biodynamically zen outside, a few steps through the somewhat-attached full resto'll get you onto a fully furnished patio with bad ass ocean views, reminding you of the other best thing about spas: that at least the fat dudes inside them are tastefully covered with robes.
