Created by barman Josh Goldman at the Santa Monica, California, outpost of butcher shop/restaurant Belcampo, this vibrantly hued cocktail mixes fresh beet juice with citrus-infused agave syrup to create a cocktail that is both healthy and quaffable. Made with añejo tequila, which gives the drink depth and plays off the inherent earthiness in the beet juice, this modern take on a Marg is so good, “it makes you want to dance,” says Goldman.
