Cucumber Foam

FLAVOR PROFILE

INGREDIENTS

  • 500 g Cucumber Juice
  • 1 oz Cointreau
  • 7 gelatin sheets

INSTRUCTIONS

Step one

Bloom gelatin in cold water.

Step two

Dissolve gelatin in cucumber juice over a low flame.

Step three

Combine juice mixture and Cointreau in an iSi and charge twice. Allow 4 minutes to set.

Step four

Dispense at room temperature.
