Cucumber Margarita Popsicle

Citysticks founder Justin Harter has perfected the boozy popsicle, so we asked him for his expert advice on how to make a refreshing Cucumber Margarita version. “For this popsicle, I wanted to showcase how something vegetal can provide a strong base and a more interesting flavor to your run-of-the-mill Margarita,” Harter says. This cooling treat is absolute perfection. It’s sweet, vegetal and tart with just the right amount of booze to relax you on a hot summer’s day. “It's a big punch of flavor in your mouth, which I find exciting.” We agree.
Cucumber Margarita Popsicle
INGREDIENTS
- 1.5 Cup Cucumber
- 1 Cup Water
- 1 Cup Sugar
- .75 Cup lime juice
- .75-1 Cup Tequila
INSTRUCTIONS
Step one
Combine cucumbers, water and sugar in a pot over low heat and cook for 10 minutes, or until the sugar has dissolved and the cucumbers are soft.
Step two
Add to a blender and blend thoroughly.
Step three
Add tequila to the mixture. Stir well or blend again to mix.
Step four
Pour into molds and freeze overnight. Serve!
