Legendary bartender Jackson Cannon crafted this effervescent riff on a Champagne Cocktail for the Greydon House in Nantucket. Named for a local apple variety, this drink swaps out Champagne for small-batch sparkling cider from Massachusetts and throws in some Calvados (French apple brandy) for good measure. In place of the Champagne Cocktail’s usual sugar cube, this delightful drink gets its sweetness from maple syrup.

INGREDIENTS

  • 0.75 oz Calvados
  • 0.75 oz fresh lemon juice
  • 0.5 oz maple syrup
  • 1 dash Peychaud's Bitters
  • Bantam Rojo Cider, to top
  • Long lemon twist, for garnish

INSTRUCTIONS

Step one

Add all ingredients, except for the cider and garnish, to a shaker and shake with ice.

Step two

Strain into a Champagne flute.

Step three

Top with cider and garnish with a long, spiral lemon twist.
