Bourbon Blackberry Collins


  • blackberries
  • ice
  • ½ cup sugar
  • ½ cup water
  • 1½ oz. bourbon
  • ¾ oz. fresh lemon juice
  • ¾ oz. lime juice
  • 1 oz. blackberry simple syrup
  • chilled club soda
  • blackberry ice cubes


  • First make your blackberry syrup by adding 16 oz of blackberries to ½ cup sugar and ½ cup water. Bring to a boil. Remove from heat once blackberries become soft. Strain into a vessel for storage and chill.
  • In a cocktail shaker full of ice add 1 oz blackberry syrup, bourbon, lemon and lime juices. Shake vigorously for 15 seconds or so.
  • Strain into a blackberry ice-filled collins glass. Top off with club soda and garnish with the remaining blackberries.
