Bourbon Blackberry Collins
- ½ cup sugar
- ½ cup water
- 1½ oz. bourbon
- ¾ oz. fresh lemon juice
- ¾ oz. lime juice
- 1 oz. blackberry simple syrup
- chilled club soda
- blackberry ice cubes
- First make your blackberry syrup by adding 16 oz of blackberries to ½ cup sugar and ½ cup water. Bring to a boil. Remove from heat once blackberries become soft. Strain into a vessel for storage and chill.
- In a cocktail shaker full of ice add 1 oz blackberry syrup, bourbon, lemon and lime juices. Shake vigorously for 15 seconds or so.
- Strain into a blackberry ice-filled collins glass. Top off with club soda and garnish with the remaining blackberries.
