Caprese Lasagna Roll-Ups


  • 3 tablespoons olive oil
  • ½ onion, diced
  • 3 garlic cloves, crushed
  • 1 tablespoon tomato purée
  • 1 tablespoon dried basil
  • Salt and pepper, to taste
  • 1 can tomatoes
  • 1 egg white
  • 10½ ounces ricotta cheese
  • 7 ounces grated mozzarella
  • Small bunch basil, chopped
  • 6 sliced tomatoes
  • 2½ ounces Parmesan, grated
  • 6 lasagna strips, cooked


  • Preheat the oven to 350°F.
  • Heat the olive oil in a pan and add the onions. Cook until they soften, then add the garlic and cook for an additional minute. Mix in the tomato purée and the chopped tomatoes, and stir well.
  • Sprinkle in the dried basil, salt, and pepper. Mix thoroughly and simmer for 10 minutes.
  • In a large bowl, whisk together the egg white, ricotta, mozzarella, salt, pepper, and basil.
  • Take the cooked lasagna sheets and spread some tomato sauce over them. Follow with the cheesy ricotta mixture and 3 sliced tomatoes. Roll up each sheet, and line them up in a baking dish. Top with any remaining sauce and a generous sprinkle of Parmesan.
  • Place the tray in the oven to bake for approximately 15 to 20 minutes.
  • Top with shredded basil, and serve.
