This Spicy Tequila Cocktail Will Awaken Your Senses

In the dead of February, all we want is to be on a beach somewhere sipping a tropical, fruity cocktail with a tiny umbrella added. Unfortunately, that's not always an option. But this spicy sunshine margarita is the perfect drink to kick you out of your winter woes without spending all your savings on a tropical retreat. Made with pineapple, yellow peppers, and jalapeño-infused tequila, this cocktail will make you think your kitchen is actually a luxurious beach cabana. Well, probably not, but after a few you won't care.

Yellow Light Cocktail (Spicy Tequila Cocktail)

INGREDIENTS:
  • 1 jalapeño pepper
  • 4 ounces blanco tequila
  • 1 pineapple
  • 2 yellow peppers
  • ¼ cup of water
  • 1.5 ounces lime juice
DIRECTIONS:
  • First, you're going to make your own jalapeño-infused tequila. Which is a fancy way of saying you're going to cut a jalapeño in half, scoop out the seed and the white stuff, then put them in a mixing bowl (reserve the actual pepper for future pizza needs). After that, pour in the tequila and wait 10 minutes.
  • While your tequila infuses, make some pineapple pepper juice. Cut the two peppers into thin strips and toss them into a blender. Next, core, peel, and cut a whole pineapple into chunks (or buy pre-cut pineapple) and add it to the blender with ¼ cup of water. After that, strain out the pulp. You can also use a juicer.
  • Strain your tequila (unless you want to drink seeds), then pour it into an ice-filled shaker with the lime juice and 3 ounces of pineapple-pepper juice. Shake, strain, and enjoy over ice.
