Stuffed Pork Loin
- one pork loin
- 1 tsp yellow mustard
- 6 slices of pancetta (Italian bacon)
- 12 oz of parmesan cheese
- fresh sage
- salt and pepper

- First, butterfly the pork loin.
- Rub the entire loin with mustard. Next add slices of pancetta and fresh sage. Then add the cheese.
- Roll it up and tie it with kitchen string at the top, bottom, and middle of the pork loin.
- Smoke for 35 minutes at 300°F.
