Stuffed Pork Loin


  • one pork loin
  • 1 tsp yellow mustard
  • 6 slices of pancetta (Italian bacon)
  • 12 oz of parmesan cheese
  • fresh sage
  • salt and pepper
  • kitchen string


  • First, butterfly the pork loin.
  • Rub the entire loin with mustard. Next add slices of pancetta and fresh sage. Then add the cheese.
  • Roll it up and tie it with kitchen string at the top, bottom, and middle of the pork loin. 
  • Smoke for 35 minutes at 300°F.
