Peachy Keen

This mint- and peach-laced gingerade from Julie Rogers of Coltivare in Houston is the holy grail of kid-friendly mocktails. It’s delightfully sweet with the perfect amount of lemon sour. Mint gives the cooler an ultra-refreshing herbal kick, which also happens to pair seamlessly with a little bourbon (if you’re in the mood). If ginger beer proves to be too spicy for the kids, reserve it for the grown-ups and swap in ginger ale.

INGREDIENTS

  • mint
  • 1 oz lemon juice
  • ginger beer
  • 2 oz peach syrup
  • 1.5 oz bourbon
  • mint

INSTRUCTIONS

Step one

In the bottom of a Collins glass, muddle the mint.

Step two

Fill the glass with crushed ice and add the peach syrup and bourbon (if you’re making a grown-up drink).

Step three

Stir or swizzle, then top with ginger beer and garnish with a mint sprig.
