The perfect Highball for spicy cocktail-loving heat-seekers, this variation on the classic Paloma mixes the cooling flavors of a Mojito with raw capsicum heat. Made with fresh muddled jalapeño, mint, vegetal blanco tequila and sweet, spritzy, citrusy Squirt, it’s both fiery and refreshing at once. Serve it with homemade chips and tequila-spiked guacamole and you’ll have the perfect start to a proper fiesta.

INGREDIENTS

  • 2 oz blanco tequila
  • 0.75 oz lime juice
  • Jalapeño
  • 5 Mint Leaves
  • Whole Jalapeño, notched, for garnish
  • Squirt Soda

INSTRUCTIONS

Step one

Add the tequila, mint leaves and jalapeño slices to a highball glass and muddle.

Step two

Add lime juice and cubed ice to the glass, and top with Squirt.

Step three

Stir to mix and garnish with a jalapeño notched with a knife.
