The NTL Yam

Yams bridge the gap between the main course and dessert. This bourbon cocktail from the team at The National in New York's Benjamin Hotel is made with a maple-tinged yam purée and is perfect with dinner or as a soothing post-meal digestif.

INGREDIENTS

  • 2 oz bourbon
  • 1 tbsp sweet potato purée
  • .5 oz maple syrup
  • .5 oz fresh lemon juice
  • Spiced rim (2 tbsp sugar, 1 tbsp cinnamon, 1 tbsp star anise and 1 tbsp nutmeg, mixed together)

INSTRUCTIONS

Step one

Wet the rim of a coupe with a lemon wedge, then roll the rim in the spice mix.

Step two

Add the remaining ingredients to a mixing tin with large ice and shake vigorously.

Step three

Double strain into the coupe.
