Test Pilot

A relatively restrained tiki drink from the legendary Don the Beachcomber, the success of the Test Pilot hinges on just a few dashes of Angostura and Pernod. The bitters and anise-based liqueur give the drink a beautiful, aromatic quality, while Cointreau and falernum add further complexity to the otherwise simple combination of two rums and a single fruit juice. While the drink went on to inspire iterations like the Jet Pilot, Ace Pilot, Space Pilot and Astronaut, Don’s original Test Pilot remains the benchmark.
