The base is piquant and savory, with simple syrup, fresh lemon and pineapple juices providing balancing sharp and sweet notes. The end result is an extremely satisfying, full-bodied cocktail. INGREDIENTS
- 1.25 oz Johnnie Walker Red Label
- 1 oz Fresh Pineapple Juice
- 0.75 oz Simple Syrup
- 0.75 oz Lemon Juice
- 1 handful of arugula
- 1 arugula leaf
INSTRUCTIONS
Step one
Combine lemon juice, simple syrup, and arugula in a blender. Blend thoroughly.
Step two
Fine strain the mixture into a cocktail shaker with ice.
Step three
Add scotch and pineapple juice.
Step four
Shake and strain into a Collins glass over fresh ice.
Step five
Garnish with arugula leaf.
