Tiger Style

This frothy cocktail might look like a Rum Flip, but it tastes nothing like one. Made with earthy Batavia Arrack, tart calamansi juice, palm sugar syrup, egg whites and a dash of salt, it is a delightful balance of sour, sweet and creamy that’s fresh enough for a balmy day and comforting enough for a chilly evening.

Sweet, Sour


  • 1.75 oz Batavia Arrack
  • .75 oz calamansi
  • .75 oz palm syrup
  • 2 drops saline solution
  • 1 egg white
  • lime wheel


Step one

Add all ingredients to a shaker without ice, and dry shake.

Step two

Fill the shaker with ice and shake again until cocktail is chilled.

Step three

Strain the drink into a lowball glass.
