Known for its fresh approach to tiki cocktails, Brooklyn’s Fort Defiance doesn’t disappoint with its Gin and Tonic twist. In true tiki fashion, the cocktail employs pineapple, cardamom and lime to channel the tropics, and add lovely balanced depth to a base of navy strength gin and a tonic topper.

INGREDIENTS
- 2 oz navy strength gin
- 1 oz fresh pineapple juice
- .75 oz lime juice
- .75 oz simple syrup
- 3 cardamom pods
- tonic
- 2 to 3 Pineapple leaves
INSTRUCTIONS
Step one
Place cardamom pods in a shaker and crack with a muddler.
Step two
Add remaining ingredients, except tonic and garnish, to the shaker and fill with ice.
Step three
Shake, and fine strain into a tall tiki mug over fresh ice.
Step four
Top with tonic.
Step five
Stir gently and garnish with pineapple leaves.
