Simmering grassy shiso into a syrup lets you add herbal sweetness to any drink, but it’s also critical to the healthy-ish green slushy known as the Dodo.
Rich Shiso Syrup

INGREDIENTS
- 1 Cup sugar
- 5-6 fresh green shiso leaves
- .5 Cup water
INSTRUCTIONS
Step one
In a blender, combine sugar and shiso leaves.
Step two
Add sugar-shiso mixture to water in a saucepan and bring to a light simmer, stirring until the sugar dissolves.
Step three
Remove from heat and allow to cool.
Step four
Strain through a fine mesh strainer into a storage container.
