Watermelon Rum Slushie

Watermelon is so good, it doesn’t take much to turn it into a delicious cocktail. First, get the ripest watermelon you can find—since this drink is so simple, the watermelon replaces any simple syrup you might usually use in a drink, so the riper the watermelon, the better. Next, throw the watermelon chunks into a blender along with fresh lime juice for a tart kick, white rum and ice. Blend it all together until the drink is smooth and ice cold, then divide it into glasses—this recipe makes about four generous drinks.
Once you’ve made this drink the first time, feel free to adjust the lime juice to your taste. And if it just isn’t quite sweet enough, throw in a quarter cup of simple syrup and see if that tickles your fancy. For a spicy upgrade, try dipping the watermelon wedges in Tajin seasoning before garnishing the drinks. The tangy chile-lime seasoning will offset and enhance the watermelon’s sweetness and it will look impressive. Or, if you really want to go all out, serve this cocktail out of a homemade watermelon keg.
