Indigo Imp Brewery

There are microbreweries, and then there's Indigo Imp, a tiny spot where finding the tasting room is half the fun. The hidden gem is located in an unmarked room in a gigantic, antiquated warehouse, with extremely limited hours. But get in there, and you'll taste some of the most unique small-batch brews around: unpasteurized beers made using open fermentation, which basically means they're brewed in gigantic vats with no covering except the gigantic blanket of yeasty foam that bubbles to the top.
