Founded in 1994 near Philadelphia’s Rittenhouse Square, La Colombe Torrefaction sold its coffee beans wholesale to New York restaurants before bringing its retail cafes to the area. This high-ceilinged, light-filled Soho stop is one of a few downtown outposts known for its third-wave coffee and croissants made by local bakeries. Walk in anytime of day and you'll see well-dressed (and usually beautiful) customers flipping through The New York Times as they sip brews that range from the chocolatey Corsican to the nutty Nicaraguan.
