The ramen menu is replete with lighter, chicken-based shio (salt) and shoyu (soy-flavored) broths; medium-textured miso broth made with chicken and pork; and bold, whole-hog tonkotsu broth -- each distinguished by its own mix of toppings, from braised pork shoulder to black-garlic oil. Don't fret, plant-eaters, there’s a meatless alternative, but you really don’t know what you're missing from the juxtaposition of velvety pork belly paired with a perfectly soft egg.
