Republique hails from a crazy all-star team that includes the married chef duo Walter and Margarita Manzke -- who were among the most lauded in all of LA during their tenure at Downtown's Church and State -- and one of the restauranteurs behind Bestia and Sotto. Their 'tails and fare are definitely worth a weeks-in-advance res.
While we can’t say for certain if Charlie Chaplin was a fan of French fare, we have a good feeling he’d be stoked to dine in his former office space. The expansive space with exposed brick and large, front-facing windows is now a stunning, cathedral-like hotspot where chef Walter Manzke turns out exceptional renditions of French hits using farm-fresh ingredients. You’ll probably want to start with the house-baked bread with pan drippings, before moving on to the Beef Tartare or Sonoma Duck Pate en Croute, followed by the Dover Sole a la Meuniere or red-wine Braised Beef Short Ribs (a Korean-inspired rendition of this dish is a staple on the brunch menu as is the Kimchi Fried Rice). And if you’re feeling even more decadent, there’s the classic Tournedos Rossini with foie gras and truffles. You also don’t want to miss any of pastry chef Margarita Manzke’s amazing baked goodies.

Chefs and owners Walter and Margarita Manzke are responsible for whetting Angelenos’ appetite for French-inspired delicacies with this all-day restaurant that’s housed in a historic building originally erected by actor Charlie Chaplin. They’ve since expanded on the trend with the recent opening of Bicyclette and Manzke restaurants, but Republique remains a favorite for weekend brunches that feature seasonally changing dishes as well as Margarita’s famous pastries. The menu spans veggie-friendly items like a pupusa stuffed with mushrooms, zucchini blossoms, black beans, and Oaxacan cheese, that’s topped with a fried egg and avocado, as well as hangover-busting dishes like a Croque Madame with house-cured ham, gruyere cheese, baby green salad, and a fried egg. Carafes of mimosas and sangria are on offer, as are brunch cocktails like Bloody Marys and a Papa Hemingway Spritz with grapefruit aperitif, rum, passion fruit, maraschino, lime, and soda.
