You’ve all heard of it. And if you’ve been to St. Louis, you’ve probably waited in line to try it. The barbecue scene across Missouri -- namely in St. Louis and Kansas City -- is a force, and Pappy’s Smokehouse is a major player, selling around 6,000lbs of ribs per day. Go early, get the ribs, and be prepared for a wait. (And if you don’t go early, be prepared to wait an entire day, as they close when they run out of meat.) Pappy’s draws crowds from across the country, and will continue to do so with its Memphis-style, sauce-less meat (its juices alone will suffice), distinct fruit wood smoke, and hog-whispering tendencies.
