If there’s a neighborhood in Chicago that serves as the epicenter of rooftop swilling, it’s the Loop. This soaring hub, after all, is the birthplace of the skyscraper, and it still reigns as the nexus of the city’s most staggering architecture. Despite the omnipresence of its rooftop bars, there are really never enough. Case in point: Château Carbide, a newcomer in a timeworn space. Nestled on the 24th floor of the historic Carbide & Carbon Building, an Art Deco beaut built in 1929 and accessorized with gold terra cotta and bronze trim, the bar is the crown jewel of the newly minted Pendry Chicago hotel. It boasts both a garden-clad outdoor terrace and an opulent indoor motif inspired by the Cote D’Azur—on weekend evenings, DJs curate playlists heavy on French house music. To drink, look for lots of rosé, Champagne, absinthe, and elegant cocktails, like the gin-based Arctic Garden with thyme, Persian cucumber, candied ginger, tonic, aloe, and lime.
