Run by an Australian alumni of Ten Belles, Fondation is a tiny shop just a stone’s throw from the greenery of the Square du Temple. Fondation always has a solid filter coffee, including an iced version when it’s hot, which is not a given in Paris. Their beans hail from Belleville Brulerie, and their small selection of cakes come from a rotating selection of the best of local bakeries. There are only about a dozen seats in this tiny cafe, so either be prepared to wait or take your coffee to go.
