This little coffee shop near Old Chinatown is a perfect picture of Portland: both cold and hot coffee drinks are served in mason jars and the music is played only on vinyl. On top of that, Courier has arguably the best vanilla cold brew in the city, which can only be rivaled by their freshly made caneles (definitely the best in the city). Grab one (or twenty) of both and have a seat along the bar, just behind a wall-to-wall mirror and enjoy your day observing the hustle and bustle of a lively section of the city.
