Founded by the former sous chef at the Ritz Carlton Laguna Niguel (Chef Dee Nguyen), Break of Dawn offers a creative, modern menu with a subtle flair of Vietnamese flavor. For instance, the seemingly standard bacon and eggs actually features tempura flash fried eggs, house-cured pork belly, kimchi spiced crema, and potatoes. The beef brisket is similarly altered: beef tongue ragu, king oyster mushroom, and merlot poached eggs.
