Ah, Old New York. In a city of everything new, celebrated chef Tom Colicchio presents updated takes on the most classic of American classics (in a French-leaning way) at the Financial District’s Beekman Hotel in an 1883 landmark building. In the long and narrow doing room, oysters Rockefeller and sautéed foie gras are served on white tablecloths at sea green banquettes and loin of lamb or pistachio-lemon rabbit schnitzel turn heads next to brick walls punctuated by stained-glass windows in hues of violet, emerald and umber. The chefs rotate borderline cliche New York staples, like beef Wellington or lobster thermidor, so get ready for a throwback.
