Off the bat, Autentica tells you what it’s all about: authentic Mexican. The Concordia restaurant specializes in traditional Guerrero regional cuisine, meaning this is not the place for a burrito (in fact, they don’t even have burritos on the menu). Chef Oswaldo Bibiano’s menu is rooted, upscale, and offers large portions at reasonable prices with a smattering of epazote across the board. Start your meal with regionally-inspired familiar favorites like tacos al pastor or queso fundido con chorizo, and move on to more complex dishes like the “Pollo en Mole Guerrerense,” made with their signature 30-something ingredient mole.
