The world of ramen has never been especially welcoming to vegetarians, but this Valley spot is making up for lost time thanks to an entirely vegetarian menu with noodle bowls centered around vegan broth, wood ear mushrooms, jicama, baby bok choy, and fried onions. From there, you can customize your ramen with options like jalapeno and black beans, various types of tofu, and lots of different spice levels; and gluten-free folk can get GF noodles for an upcharge. Also look for some wild vegan sushi rolls including a peanut butter-topped veggie roll and crispy rice and spicy plant-based tuna.
How to Order: Walk-ins only for dine-in. Order online through the restaurant for pickup.

This bright blue restaurant serves some of LA's most notable vegan ramen bowls, featuring a blizzard of vegetables and textures. Their spicy mayu garlic jalapeño broth comes fortified with mayu (sesame oil), earthy black beans, fibrous jicama, baby bok choy, fried garlic, and roasted jalapeños. Gokoku provides a soft-boiled egg option that re-categorizes each bowl from vegan to vegetarian. They even let you build your own ramen from a list of wholesome broths and toppings and provide a choice of flour, whole wheat, or gluten-free noodles; anything goes, except meat.
