The newly opened Rouge Room at the Red Rock Resort is a stylish cocktail lounge with champagne, martini carts, and a supper club atmosphere. The outdoor deck, however, offers a nice change of scenery, where guests can sip on drinks under moonlight by the pool, flanked by eight cozy cabanas. Come by during the day, when it takes on the role of Rouge Cabanas, an adults-only oasis with live DJs on weekends and a staircase that connects to the main hotel pool complex. Sit at the bar or book a cabana to order seafood platters, caviar service, and other elevated bites. The cocktails are crafted with an artisan touch, but still on the sweet side for summer lounging. The concept was founded by Wish You Were Here Group, the same team behind Kassi Beach House at Virgin Hotels.
