When Sarah Zubiate wanted to find a way to offer her family healthier, Latin-inspired foods that still paid homage to her Mexican-American heritage, she created a signature small-batch salsa based on her mom’s 60-year-old recipe. She expanded her lineup to feature plant-based, organic queso and crema and, since November 2019, has produced everything in-house at ZUBI Farms, a sustainable, certified-organic, zero-waste production facility and farm in Athens, Texas.
